So for Christmas I got a Breyer Dream Horse paint kit, but I'm having dificulty making up my mind what I want to paint them as.
Should I go with something flashy like a pinto or appaloosa? Or something more simple like a bay, chestnut, or even black beauty?
They are arabesque type models, I have no interest at the moment in remolding them or doing anything besides painting them.
I have several horrse "characters" so to speak and have thought of painting them to look like two of those, but then the choice of which "character" comes up.
What colors do you like to see on a Breyer model? Markings? What should a first time acrylic painter attempt?
I'm attempting to plan out what I want so I don't screw up the models, but I am so bad at making up my mind, I sure would love some help here. Thanks :)

Advice from a painter
I think you should probably try a simpler color to start out, like a black or maybe a chestnut. I think a black would probably be the easiest paintjob with the most satisfying results. A chestnut might end up being kind of bland without the shading effects only pastels and airbrushes offer, while a black doesn't need shading, so it'll look as good or better without it. You might want to try a couple leg/face markings with the simpler colors, to set them off.
In my opinion, though, acrylic painting is probably the hardest way to paint a horse and make it look good (with brushstrokes and all). I would try painting (though in my opinion, spray-painting is the better option) the whole model horse black or brown, then adding markings, eyes, hoof details, and mane or tail colors with acrylic paint.
Primer is important; I didn't think so at first, but I discovered it when the black spray paint on my first custom started to wrinkle and bubble! I'm not sure how important it would be for an acrylic-paint-only custom, though.
